Beyond Bali With Lara Lee

Ingredients

  • 200 g plain flour
  • 50 g rice flour
  • 75 g sugar (see Note)
  • Salt
  • 300 ml water
  • 4–6 ripe bananas
  • Cooking oil, for deep-frying
  • Chocolate sauce, freshly grated coconut, to serve (optionally available)

Instructions

  1. In a big bowl, mix the flour, rice flour, sugar and a pinch of salt. While mixing, step by step add the water in a continuing stream, till the batter is clean and properly mixed.
  2. Peel the bananas and slice lengthwise. They can be sliced into rounds in case you favor.
  3. Heat sufficient oil in a medium saucepan to deep-fry over medium warmth. Dip the sliced banana individually into the batter, till utterly coated, then gently place into the new oil and deep-fry till golden and crisp. Repeat with remaining sliced bananas.
  4. Transfer the deep-fried bananas to a plate lined with paper towels to empty of any extra oil. Remove to a serving plate and drizzle with chocolate sauce and sprinkle with coconut (if utilizing).

Note

If you favor a much less candy pisang goreng, cut back the sugar amount within the batter to your style.
