These herbaceous melting potatoes have a crisp, browned crust with a young, melt-in-your-mouth inside. Parsley provides a recent end, however you would swap in a wide range of herbs like chives, thyme or dill. Serve these velvety potatoes alongside roast rooster or pan-seared fish.
