There’s something about the Indian summer. As hot and unbearable as it can sometimes get, ironically it’s the one season we look forward to the most! Often the little things that bring you joy, make you endure 45C-50C temperatures, are surprisingly the simplest of things. Topping our ‘summer list’ is our humble king of fruit, the mango, which honestly makes us look forward to summer, and summer desserts of course!

More things to look forward to … stone fruit, watermelon, light meals, cold soups or gazpachos, simple desserts, birds, flowers, nests, bees all have the potential to keep you quite busy. It’s no wonder that time flies so quickly and you want to hang on to the season, stretching it as much as we can, making the most of it.

The hotter it gets, the better and juicier fruit tastes, making summer and the wait so worthwhile! Also, the hotter it gets, the more inspiration I find to create new mango desserts!
