Ingredients
- 2 cups refined flour (maida) + for dusting
- 1 teaspoon instant dry yeast
- 1 teaspoon salt
- 1 teaspoon castor sugar
- ¼ cup milk
- 1 tablespoon oil
- Garlic mayonnaise as required
- Red chilli chutney as required
- Shredded cabbage as required
- Grilled chicken pieces as required
- Pickled beetroot slices as required
- French fries as required
Method
- Take 1 cup water in a bowl, add instant dry yeast, salt and castor sugar and mix well.
- Take refined flour in a large bowl, make a well in the centre and pour the yeast mixture into it and mix well with a wooden spoon till everything is well combined. Add milk and knead with your hand to a soft dough. Add oil and continue to knead till smooth. Cover with a damp muslin cloth and set aside to prove for 1-1½ hours.
- Knock back the dough, knead it lightly, divide the dough into equal medium portions and shape each portion into a ball.
- Dust the worktop with some flour, place each dough ball on it and roll it into a disc of medium thickness.
- Heat a tawa, place a disc on it and cook on medium heat for 2 minutes. Flip and cook the other side, pressing it gently with a thick cloth, for 2 minutes or till it puffs up. Take it off the tawa and place it on a plate.
- Spread some garlic mayonnaise on each khaboos and top it with red chilli chutney. Place some shredded cabbage, topped with grilled chicken pieces, pickled beetroot slices and French fried. Roll the khaboos, wrap it in a tissue paper and serve immediately.
