Cheese is life if you ask me (I know you’re out there asking). It’s no secret I love its rich, ooey, gooey, melty goodness and I don’t shy from using it wherever and whenever I can. Even in dishes you might think it has no business being in. Dumplings? Yep, they can take some brie. Ramen noodle soup? Absolutely, complete with full-on French onion vibes. In spring rolls? Duh, what kind of a question is that? Let’s make ’em cheeseburger ones. Not only do I cheese-ify classic Asian dishes, I’m also a fan of giving an Asian twist to classically Euro-centric cheesy recipes. Such as mac ’n’ cheese (it’s great, but kinda needs kimchi), pasta (let’s throw miso at it, shall we?) and spanakopita (who needs spinach when there’s morning glory!). Yep, cheese recipes just make everything so much better.
I’m also a big fan of eating cheese for its own sake. There’s nothing more delicious (or more impressive when entertaining) than assembling a lovely cheese platter with select accompaniments to go alongside. In my world, this is a whole meal – chunks of room-temperature cheeses (they taste best when not fridge-cold), fruit pastes, maybe some olives or pickles, fresh fruits and lovely crackers.
