Ingredients
- 1 brioche bread loaf
- 6 eggs
- 1½ teaspoons vanilla essence
- ¾ cup powdered sugar
- ¾ cup milk
- Butter as required
- Peanut butter as required
- Nutella as required
- Fresh mixed berries (strawberries and blueberries) for serving
- Crème fraiche for serving
- Fresh mint sprigs for garnish
Method
- Break eggs into shallow wide bowl, add vanilla essence, powdered sugar and milk, and whisk well.
- Slice the brioche bread into 8 thick slices.
- Apply peanut butter generously on one side of 4 bread slices and apply Nutella generously on one side of the remaining 4 bread slices. Place these over the peanut buttered slices with the Nutella side facing downward to make sandwiches.
- Heat butter in a non-stick pan.
- Dip each sandwich in the egg mixture and gently place it in the pan and cook on medium heat for 1-2 minutes on each side.
- Halve the French toasts and place them in individual serving plates. Serve hot garnished with strawberries, blueberries, crème fraiche and fresh mint sprig.
