The Best German Egg Liqueur | Eierlikör


Whether you want some German egg liqueur, also called Eierlikör, for sipping or for baking, this recipe gives you a rich, velvety liqueur that’s incredibly easy to make at home – and so much better than store-bought!

You may have seen Dutch Advocaat egg liqueur or something similar in stores, but it can be pricey—and you often end up with way more than you need. That’s why making your own is the perfect solution: it’s easy, affordable, and you can make just the right amount.

The ingredients

Here are the simple ingredients you will need:

  • Egg yolks: I love using free-range eggs for their deep orange color and custard-like flavor but most importantly, you want to use very fresh eggs 
  • Powdered sugar: This sugar dissolves better than granulated sugar
  • Vanilla extract: Adding some vanilla complements the rich flavor
  • Heavy cream: You can use heavy cream or whipping cream which ensures a very creamy drink
  • Rum: I prefer using Trader Joe’s dark rum for its deeper flavor

TIP: Instead of discarding the remaining egg white, you can use it in a quiche or holiday cookies such as German cinnamon stars

Useful tools and equipment

Here are some helpful tools for making this creamy liqueur:

  • Handheld mixer: I find using a handheld electric beater gives me more control than my standmixer
  • Medium mixing bowl: There will be some mixing and I love using a stainless steel mixing bowl
  • Double-boiler: Since we need to create a hot water bath, having a double-boiler is ideal but you can also put a heat-proof glass bowl over a small saucepan
  • Pretty bottles: I love pouring my egg liqueur into pretty bottles, especially if I am gifting it

Substitutions and variations

The original recipe is so good that I don’t think you need to do much to it but you can always:

  • add a pinch of salt to bring out the sweetness even more
  • use a fresh vanilla bean instead of vanilla extract or use vanilla sugar
  • you can also use Vodka or white rum for this egg-based liqueur

How long does it last?

Since the alcohol and the sugar act as a preservative, this egg liqueur will last up to 4 weeks in the refrigerator – if you use very clean equipment.

How is egg liqueur different from classic eggnog?

Egg liquer is much thicker and boozier than eggnog. The former is typically sipped out of small glasses while eggnog is often enjoyed by the cup.

How to make

  1. In a medium bowl, combine the sugar and the egg yolks. With a handheld mixer, beat on high speed until the mixture becomes pale and fluffy. Add the remaining ingredients.
  1. Transfer the egg mixture to your double boiler. Continue mixing it over medium heat until the egg mixture thickens. 

TIP: Since this recipe uses raw eggs and to be on the safe side, make sure the egg mixture reaches 165˚F (74˚C). Remove from the heat and pour into clean jars or bottles.

  • Combine egg yolks and sugar in a medium bowl. With a handmixer, mix on high speed until pale and creamy.

  • Add the vanilla extract, the cream, and the rum. Mix until well combined.

  • Transfer the mixture to a double boiler or to a heat proof glass bowl over a pot of boiling water and mix on low speed until the mixture becomes very thick.

  • Transfer the egg liqueur to a clean jar or pretty bottles.

  • since this recipes uses raw eggs, I recommend using a thermometer and bringing the egg mixture up to 165˚F (74˚C) to be on the safe side
