We’ve done a lot of delicious potato recipes here on Spain on a Fork, and these poor man’s potatoes in onion sauce are no exception. They’re filled with flavors, made with affordable ingredients, and all done in about 40 minutes. Serve them next some pan-grilled fish and a garden salad for a great meal.
To make this recipe, it’s important to use potatoes that are a bit more waxy than starchy. As they hold their shape better when being boiled. I used yukon golds, but you can also use new potatoes, golden delight, or even red potatoes.
To make the onion sauce, I used a combination of onions, garlic, green bell pepper, and vegetable broth. You can mix it up and use different vegetables if you like. You can also use chicken broth or even beef broth if you prefer.
TIPS & TRICKS to Make this Recipe: While the potatoes are simmering, make sure to gently shake the pan once in a while. This will help thicken the onion sauce. This dish will hold for up to 3 to 4 days in the fridge in an airtight container.

Poor Man’s Potatoes in Onion Sauce | Poor potatoes in onion sauce
Ingredients

all purpose flour

dry white wine
120 ml -

tsp
dried thyme
.50 grams -

tsp
crushed red pepper flakes

waxy potatoes
1 kilogram -
3 1/2
cups
vegetable broth
860 ml - sea salt & black pepper
- chopped chives for garnish
Instructions
-
Cut the potatoes (peeled) into bite-sized pieces that are 2 cm (3/4 inch) thick, cut the onion into small slivers, roughly chop the garlic, and finely chop the green bell pepper

Heat a large fry pan or stock pot with a medium heat and add in the olive oil

After a couple of minutes add in the chopped vegetables (except for the potatoes), mix continuously, after 5 minutes and the onions are slightly translucent, add in the flour, continue to mix for 2 minutes, then add in the white wine, thyme, and crushed red pepper, mix together and then simmer

After simmering the wine for 3 minutes and the alcohol has cooked off, add in the chopped potatoes, and season with salt & pepper, mix together until well mixed, then add in the vegetable broth, raise to a high heat and give it a gentle mix

Once it comes to a boil place a lid on the pan and lower to a low-medium heat, simmer for 20 minutes or until the potatoes are just cooked through, make sure to shake the pan once in a while, as this will help thicken the sauce

Transfer the potatoes and sauce into a large serving dish and top off with chopped chives, enjoy!
