Ingredients
- 1 cup rice flour
- ¾ teaspoon dried ginger powder (saunth)
- ½ teaspoon green cardamom powder
- 1 cup chopped jaggery
- ¼ cup ghee + for greasing
- Oil for deep frying
Method
- Sift together rice flour, dried ginger powder and green cardamom powder into a large bowl.
- Heat jaggery and 1½ cups water in a non-stick pan and cook till jaggery melts and the mixture reaches one string consistency.
- Strain the syrup into the flour mixture. Add ghee gradually and mix till a smooth dough is formed. Transfer the dough into a bowl, grease the top of it with some ghee, cover with cling wrap and set aside for 1 day.
- Heat sufficient oil in a kadai.
- To make each adhirasam, grease a small piece of banana leaf with some oil. Take a small portion of the dough and shape into a disc over the greased leaf.
- Gently slide in the adhirasams a few at a time, into hot oil and deep-fry on low to medium heat till golden brown and crisp. Take each adhirasam on a slotted spoon and press it with another spoon till extra oil is drained then place on absorbent paper.
- Allow to cool and arrange them on a serving plate. Serve.
