Ingredients
- 1 medium red apple
- ½ teaspoon cinnamon powder
- 1½ teaspoons instant dry yeast
- ¼ cup castor sugar
- 2 cups refined flour (maida) + for dusting
- 1 teaspoon salt
- ¼ cup melted butter + for brushing
- 2 tablespoons chopped walnuts
- 1½ cups milk + for brushing
- Butter mixture
- ⅓ cup soft butter
- 2 tablespoons castor sugar
- 2 tablespoons brown sugar + for sprinkling
- ¼ teaspoon Nutmeg Powder
- 1 teaspoon cinnamon powder
Method
- Peel and core the apple, cut it into small pieces, transfer into a blender jar and blend to a fine puree.
- Transfer the puree into a bowl, add instant dry yeast and castor sugar and mix well.
- Sift refined flour, salt and cinnamon powder into a large bowl. Add melted butter and apple mixture and walnuts and mix well. Add milk and knead into a soft dough. Transfer the dough into another bowl, brush some melted butter over it, cover with a damp muslin cloth and set aside to prove for 1 hour.
- To make butter mixture, take butter in a small bowl, add castor sugar, brown sugar, nutmeg powder and cinnamon powder and mix well.
- Knock back the dough. Dust the worktop with some flour, place the dough on it and roll it into a large sheet of medium thickness. Apply the butter mixture evenly over the sheet and roll tightly into a log. Pinch the edges to seal. Transfer into a greased bread loaf tin. Cover with a damp muslin cloth and set aside to prove for ½ hour.
- Preheat the oven to 200⁰ C.
- Brush some milk over the log. Sprinkle brown sugar and place it in the preheated oven and bake for 25-30 minutes.
- Bring the bread out of the oven and brush some melted butter. De-mould the bread and allow to cool completely. Cut into slices, place on a serving platter and serve.
