- Cook the cod in water with the bay leaf and a drizzle of olive oil.
- In the same water, cook the shrimp.
- Drain and reserve the broth.
- Cut the bread into pieces in a large bowl and soak with the reserved cod broth.
- Using a spoon, break down the bread slightly.
- Shred the cod and set aside.
- In a large pan, sauté the chopped garlic in olive oil until fragrant.
- Add the soaked bread. If needed, add more broth.
- Stir and mash the bread until it thickens.
- Add the shredded cod and shrimp.
- Season with salt and pepper.
- Remove from heat and stir in the chopped parsley.
- Drizzle with a little olive oil before serving.
