It’s my first post after 2 years and 1 month! I remember writing an article here. It took me a while to tune in, but I make my reappearance, even after so long, to share, not one, but two recipes for halva that I will be happy to try on Lent.
The halva with semolina is part of my childhood, it is the sweet that has always made it so easily and quickly mom and the house smelled of cinnamon and roasted semolina! And it goes without saying that half halva is eaten on the spot hot through the pot before even entering the form with the excuse of the “test” or without any excuse.
I continue to make it traditionally every year at such a time (okay maybe even a Clean Monday or Lent sometimes). But I can’t help but experiment with the classic 1-2-3-4 recipe that we all know and give my own variations. We start today with the first of the two versions I will propose, the one with the peanut butter and orange where instead of sugar I use honey. As you hear it. So tasty!

Before we go to the recipe it is good to say some basic things about the preparation of the halva semolina if you haven’t dealt with again.
How do we roast semolina?
Halva can be done in five or six minutes but these minutes want you there. Do not count away from the pan as the semolina during roasting is in danger of burning and requires constant stirring. The roasting stage is very important to do the right thing for our halva to get a nice body and not to muddy.
How do we add liquids to semolina halva?
When it comes to adding the wet element to the roasted semolina, whether it is the water we put in the classic halva or in the present recipe the mixed water with orange juice, make sure to gradually do it and from long and have your hands covered with long sleeves. When you add the liquid element instant will be a strong reaction and there is a risk of a hot mixture.
How do we tie the halva semolina?
When the liquids are now in, the mixture does not take much time to tie and soon we have to remove from the heat to stay juicy and not stick. Continuous stirring with a wooden spoon and as soon as we realize that the halva has thickened us enough to stand but not dried and completely, it is ready.
Thick or fine semolina?
Others are used to using half half others only thick. I personally find that the thick gives better results and roasting it well gives a very nice bite to halva. In this recipe I used 1 and a half cup of thick and only half a cup of fine. We could only put a coarse semolina.
What can I replace sugar in halva?
Where and as much as I can in my recipes I use honey instead of sugar, and completely avoid processed crystalline sugar. In the recipe here goodbye to sugar, so I used honey about 1/2 cups that, along with the sweetness of the orange butterfly, give a wonderful result. Of course, since we use orange juice and it may be a little more sour so I suggest trying the mixture at the end and adding honey as it needs to be delicious in sweetness.
What utensils to use for halva with semolina?
A cake form is fine to form our halva. We do not have to lay oil if we put the coarse almonds of the recipe on the bottom. Better to avoid glass utensils because the halva will not be so easily unloaded. To lay down evenly, press well with the back of a spoon so that there are no gaps. Allow to cool for a while and unload. Serve with a little honey more if we want.

Put a saucepan over high heat, add the olive oil and sunflower oil and wait for it to warm.

Add the coarse and fine semolina and mix well with a wooden spoon. Roast well to get a beautiful golden color stirring constantly so that it does not burn for 4-5 ‘.

Add the cinnamon and salt and mix.

Gradually and carefully add orange juice and water. Stir well to tie the mixture.

Outside the fire we add the honey gradually, controlling the taste.

Add the peanut butter and mix well.

In shape add the chopped almonds and sprinkle the halva mixture on top. Sprinkle with a spoon by lightly pressing.

Allow to cool to get rid of it easily.
