- Preheat your oven to 350°F (180°C).
- Place the sliced or diced apples in a bowl.
- Toss them with the cinnamon, lemon juice, and lemon zest and let them sit for a few hours.
- Grease a springform pan with parchment paper, then dust it with flour.
- In a separate bowl, combine the cornstarch, oat flour, baking powder, and a pinch of cinnamon.
- In another bowl, whisk together the eggs, coconut sugar, and melted coconut oil until well combined.
- To assemble the cake, alternate layers in your prepared pan: start with a layer of apple slices, then follow with a layer of the dry ingredient mixture.
- Repeat this process until the pan is full.
- Pour the liquid mixture (eggs, sugar, oil) over the top.
- Sprinkle with the chopped walnuts.
- Bake for 40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Once baked, brush the top with apple jam (optional).
- Let the cake cool completely before unmolding.
