Mulled Wine is supposed to make and keep you warm in the cold winter. But what if you live in a climate that is hot in December and still want your “Glühwein” as we call it in Germany? In that case, this recipe for Mulled Wine Ice Cream is just what you need!

Christmas in Texas is an unreliable thing. It might be hot and sunny or rainy and stormy. Last year, just a few days before the 25th we had freezing temperatures just for two days and then temperatures bounced back to warm. I need to prepare for both: cold and warm weather. Nobody enjoys mulled wine at 80°F, even with my wonderful Mulled Wine recipe. So making mulled wine ice cream is a great solution and is a serving of German Christmas feeling in a bowl.

Make it easier?

While making the video, I was wondering if Mulled Wine Ice Cream could be made even a bit easier. Some people might not have all the spices for this recipe and if you have a mulled wine at your grocery that you like, maybe just buy that and omit the spices in the milk. Just add the mulled wine at the end instead of the usual red wine. I think that might work just as well.

Mulled Wine Ice Cream – Glühwein Eis

  • 600 ml Milk
  • 200 ml Cream
  • 4 Tbsp Honey
  • 3 Cloves
  • 1 Star Anis
  • 1 tsp Cinnamon
  • 2 Limes, organic Zest of it
  • 2 Oranges, organic Zest of it
  • 4 Egg Yolks
  • 100 g Sugar
  • 125 ml Red Wine

  • Pour the 600 ml Milk and the 200 ml Cream into a sauce pan, add the 4 Tbsp Honey, 3 Cloves, 1 Star Anis, 1 tsp Cinnamon, then the zest of the 2 Limes, organic and 2 Oranges, organic to it.

  • Heat until it almost boils, then set aside for a moment while you prepare the eggs.

  • With a mixer, combine 4 Egg Yolks and 100 g Sugar until it is a foamy mass.

  • Incorporate the egg mass to the sauce pan and bring to a boil.

  • Let it simmer and thicken, then pour it through a sieve into a bowl.

  • Set the bowl onto another bowl with ice water to cool it down quickly.

  • Add the 125 ml Red Wine, stir it in, and pour everything into an ice machine which you run for about 45 minutes. Alternative: Place the bowl into the freezer and stir the content every 15 minutes until it is creamy.
  • Cover the finished ice cream with some wax paper until serving to prevent ice cristals on top.

Serve with some cinnamon or orange slices or rum pot.
