Ingredients

  • 2 rawas fillets, cut into 2 inch pieces
  • 2 tablespoons black peppercorns
  • Salt to taste
  • 2 tablespoons onion paste
  • 1 tablespoon garlic paste
  • 2 tablespoons finely chopped fresh parsley                    
  • 1½ cups panko breadcrumbs
  • 1 cup refined flour
  • 2 eggs
  • Oil for deep frying
  • Salad to serve
  • Mayonnaise to serve
  • Lemon wedges to serve

Method

  1. Take the fish pieces in a bowl, add salt, onion paste, garlic paste and 1 tablespoon parsley and mix well. Set aside to marinate for 10-15 minutes.
  2. Meanwhile, dry roast the black peppercorns in a pan. Switch the heat off and allow to cool slightly. Transfer into a mortar and coarsely crush it with a pestle.
  3. Take panko in a large plate, add some of the crushed black peppercorns and mix well.
  4. Take refined flour in a bowl. Add salt, some of the crushed black peppercorns and remaining parsley and mix well. 
  5. Break eggs into a bowl, add salt and mix well with a fork. 
  6. Heat sufficient oil in a kadai.
  7. Coat each fish piece with flour mixture, dip it in eggs and coat it well with panko breadcrumbs.
  8. Gently slide in the fish pieces into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper. 
  9. Arrange the fish on a serving platter and serve with salad, mayonnaise and lemon wedges.
