Pretzel Wreath for Oktoberfest Party ⋆ My German Recipes


This recipe is a delicious bread wreath for a larger crowd and it pairs perfectly with a cool Oktoberfest beer! The Pretzel Wreath is very rich and fills a lot, so cutting small slices is recommended.

Your Oktoberfest just got better with this crowd-pleasing recipe! I filled it with a fresh mixed Obatzda (traditional Bavarian cheese & beer spread) but you can fill it with whatever you like. However, I’ll drop the Obatzda recipe in this post, too.

This is easy to make since the dough only has to rise once. For the “Pretzel” effect and taste, I used soda instead of lye. If you are interested in the lye method, I explain it in this recipe: Soft Pretzel Braids / Pretzel Rolls

1 round bowl (for the center) glass, stainless steel, or porcelane

For the dough

  • 200 ml Water
  • 30 g Sugar
  • 30 g Molasses
  • 2,5 pckg Active Dry Yeast can be quick rise
  • 1 kg Flour
  • 160 g Olive Oil or other oil
  • 2 Eggs
  • 260 ml Milk
  • 4 tsp Salt

For the “Pretzel”

  • 200 ml Water
  • 50 g Soda
  • some coarse Salt

For the filling

  • Salad leaves
  • Ingredients like Obatzda, or cheese, or cold cuts …

  • In a large bowl mix the 200 ml Water with 30 g Sugar, 30 g Molasses, and 2,5 pckg Active Dry Yeast.

  • Add the 1 kg Flour, 160 g Olive Oil, 2 Eggs and 260 ml Milk.

  • Start kneading the dough and mix 4 tsp Salt into it.

  • Knead for 10 minutes, then divide into four equal portions.

  • Shape each portion in a long log, then braid the logs.

  • Prepare the baking sheet with parchment paper, then place the braid onto it and bend it to a large circle. Place the bowl in the center, so it will keep a round center shape during rising and baking.

  • Cover with a towel and let rise for one hour.

  • Preheat the oven to 350°F / 175°C.

  • Bring the 200 ml Water to a light boil and slowly add the 50 g Soda. Mix well! Then brush the mixture onto the braid. Sprinkle with some coarse Salt.

  • Bake the braid for 30 minutes but keep an eye on it after 20 minutes and if it gets too dark, use some aluminum foil to cover it.

  • Let it cool after baking, then cut into half and fill to your liking or with the Obatzda … recipe below. (Salad leaves, Ingredients like Obatzda, or cheese, or cold cuts …)

Prep Time 15 minutes

  • 250 g camembert, very ripe
  • 30 g spreadable cheese
  • 75 g butter, soft
  • 1 medium sized onion (or scallions)
  • some paprika
  • some salt
  • some pepper
  • some beer (German Oktoberfest beer, if possible)

  • In a bowl, combine the Camembert, the butter and the spreadable cheese and mix everything with a fork.

  • Mix with an electric mixer now or use an immersion blender.

  • If the spread is too thick, add some of the beer and mix a little more.

  • Spice with paprika to your liking.

  • Add salt and pepper to taste.

  • Cut the onions very finely, either add them to the spread if you want to eat it now or do this step right before you plan to serve the Obatzda.
