Rice with fried noodle is a vegan oriental inspiration. With naut, peas and pine seeds and a little fresh mint.

The aroma of the fried noodle gives it a slight taste like walnut, but it makes it also aromatic and looks even better.

At the origins, this preparation is made only with fried noodles and rice, and as fat the butter is used. However, because it is still a job, I decided to prepare this dish with only vegan ingredients. In addition, I added peas and naut for several nutrients.

At this preparation it is best to use basmati rice because it keeps its shape well and has a special aroma. I used today Basmati rice from Baneasa And I really liked how to boil with the fried noodle.

  • Ingredients:
  • 100 g Basmati rice Baneasa
  • 70 g minced lover
  • 2 tablespoons olive oil
  • 150 ml what
  • 70 g of frozen peas
  • 120 g boiled from canned
  • 1 teaspoon salt
  • 2 tablespoons pine seeds
  • Fresh mint leaves

In a saucepan, heat the two tablespoons of olive oil, put the noodle and stir continuously for 5-6 minutes until the nickname starts to get a slightly brown color.

Do not leave near the pan and mix continuously because the nicknishes tend to burn very quickly!

In a bowl wash the rice with plenty of cold water.

Drain the rice well from the water and add it in the pan over the fried noodle. Mix well until mixed, then add the water. Cover the pot with a lid, bring to the boiling point and boil at very low heat until the water evaporates for about 10-12 minutes.

Meanwhile, in a small pan fry the pine seeds without adding oil. Allow them to cool.

Lift the pan lid, over the rice with the noodle add the peas, the water and the salt, mix gently until all are combined.

Put the lid again and cook for 2-3 minutes. Turn off the heat and leave the lid on for another 5 minutes.

Put the rice with the noodle on a platter or on the serving plate. Finally, sprinkle the seeds of pine and fresh mint.

This rice with the noodle is perfect as it is, you can consume it as such or as a garnish with meat or baked vegetables.
