Ohhhh, amici…this one’s special. I actually whipped up this ripiene (stuffed) Brie cheese pizza on a whim one night when family dropped in unexpectedly (as they do!). I was in a rush, had a wedge of Brie, pepperoni, some pizza dough, and not much else — but you know us Italians, we always feed our guests, even if we have to invent something on the fly! 😄
It turned out so good, everyone thought I had planned it ahead. The edges folding up like a rustic crostata, that gooey Brie melting in the center, the pepperoni and basil finishing it off — pure magic.
And ascolta (listen) if you’ve got leftover dough, don’t toss it! Make some mini breadsticks, cheesy bites, or freeze it for next time. Every bit counts in an Italian cucina (kitchen), è vero (right)?
