The time for the best tomatoes has finally come. The thick and fat are Ochsenherz tomatoes on the market stalls. Such a tomato can easily weigh 400 g. I like this kind of favorite, especially because it is so meaty. Perfect for a quick Summer pasta. Of course, the temptation is obvious that you simply open a glass of tomato sauce and pour it over the pasta. But no – goal. No finished sauce in the world is as good as a pureed sauce made from fresh tomatoes. The tomato taste is absolutely genuine.
In summer, the desire is not particularly large anyway, more time than absolutely necessary in the kitchen. And a plate with a steaming hot sauce is also not the first choice when the temperatures on the 30 ° C brand scratch. Only salad can quickly become desolate. So lukewarm. I am a huge fan of lukewarm food. The full taste experience guarantees lukewarm. The idea: Hot pasta meet cold sauce and cold burrata.

Unfortunately, I am not one of the people who are granted to keep a pot with basil for more than a week. I regularly lead you to water, but basically I watch the little bush to die. The motto is a quick harvest. Strangely enough, Thai-Basilikum and Dunkles basil thrives very well in my raised bed. Only this normal basil is not my friend. So now I either buy a pot or a waistband on the market.
And I do that more often – just because of this fast, brilliant, brilliant summer pasta.
Fresh tomato sauce without cooking
For two
1 large ox heart tomato (about 350g)
½ teaspoon garlic powder
3 branches basil
1 El Creamy (Optional)
1 TL chili sauce (or crispy chili oil, Harissa also fits well)
½ TL sea salt
250 g Pasta
2 balls burrata
Fresh basil and/or oregano leaves to sprinkle
Roughly dice the tomato and put together with the garlic powder, basil, salt and crème fraîche in a blender and puree. Season and add a little salt depending on your taste.
Cook and strain the noodles in salted water according to the package instructions. Spread on plates.
Pour with the cold sauce and put the burrata on it.
Sprinkle with basil and oregano.
If you like, give freshly ground pepper over it. Enjoy lukewarm.
