fresh spinach leaves
washed and drained -

In a saute pan, heat the olive oil, then sauté the onions over medium heat for 3-5 minutes until they become soft and translucent.

Add the spinach leaves to the saute pan and allow it to gently wilt for 1-2 minutes, giving it a delicate stir occasionally and then season the mixture with salt and pepper.

Create three (3) empty spot in the spinach mixture and drop the onions to these spots. Cook the eggs until the whites are fully set while keeping the yolks delightfully soft. If desired, sprinkle a touch of red pepper flakes over the eggs.
