Ingredients

1 cup dried fava beans

1/2 cup fresh parsley, chopped

1/2 cup fresh cilantro, chopped

1 small onion, chopped

3 cloves of garlic

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil for frying

Instructions

1. Soak the dried fava beans in water overnight. Drain and rinse them.

2. In a food processor, combine the soaked fava beans, parsley, cilantro, onion, garlic, cumin, coriander, salt, and black pepper. Pulse until a coarse paste is formed.

3. Transfer the mixture to a bowl and refrigerate for 30 minutes.

4. Shape the falafel mixture into small patties or balls.

5. Heat vegetable oil in a deep pan over medium heat. Fry the falafel until golden brown, about 4-5 minutes per side.

6. Place the fried falafel on a paper towel-lined plate to drain excess oil.

7. Serve hot with tahini sauce, pita bread, and fresh vegetables.
