While it might seem like all the grocery stores and candy brands are telling us summer is over and it’s time for Halloween, we here at Allrecipes are still squeezing in the last bits of fresh, bright flavors wherever we can before we dig out our chili pots and baking dishes to welcome fall. When we asked our team of editors what they’d be making this month, we all agreed we’d be celebrating tomatoes. And what better way than in gazpacho? Some prefer the blended Spanish version, while others, like Senior Editor Courtney Kassel, love that this recipe from Chef John is a mix of blended and chopped produce. Either way, this chilled, no-cook soup combines all the flavors of summer into one bountiful bowl.

One of our favorite ways to bridge the gap between summer and cozy fall meals is with dishes like this. “In this creamy lemon zucchini pasta, linguine is topped with sautéed shredded zucchini in a lemony Alfredo sauce. A delicious summer dish that’s quick and easy to make,” creator Sarah Brekke describes. Sounds like the best of both worlds to us. Jenn Butler agrees, “The lemony creamy sauce is so simple to prepare and so delicious, a new favorite for the summertime.”

On the subject of lemon, this twist on pesto swaps citrus zest for herbs as is done on the Amalfi Coast of Italy. According to recipe developer Tricia Manzanero Stuedeman: “There are so many applications. You can slather it onto a sandwich or some crostini. Spread it as a base for a burrata salad or layer it into a white lasagna.”

Keep the grill on and try out these skewers that Chef John calls “perfect for summer entertaining.” Pork shoulder in kebab form and smothered in brown sugar, spices, and barbecue sauce is the dish we’ve been waiting for. This recipe goes with anything else you’ve got going, too, from grilled veggies to rice or quinoa.
