The 5-Minute Meal My Mom Swore By



One of my mom’s many superpowers was pulling together a meal that was filling, quick, balanced, and delicious every single day. Sometimes it was tacos, sometimes it was casseroles, or my favorite BBQ chicken wings she made each year on my birthday. There were several go to recipes that she’d pull out of her back pocket when time was tight. The Tuna Roll Up was one of them. 

How to Make My Mom’s Tuna Roll Ups

This humble meal comes together in less than five minutes. It uses only a handful of ingredients you likely already have hiding in your fridge and pantry. Great for a summer lunch, you can even prep several at a time and keep them handy for a quick snack or light meal. And if you’re a fan of the McDonald’s snack wrap, this will look familiar to you. 

Ingredients (makes 2 tuna roll ups)

  • 2 cans tuna (or 1 cup leftover tuna salad)
  • 2–3 tablespoons mayonnaise
  • Salt and pepper to taste
  • Shredded cheddar cheese
  • 2 6-inch tortillas
  • Shredded lettuce 
  • 2–3 tablespoons ranch dressing

Directions:

  1. Drain cans of tuna and mix with mayonnaise, salt and pepper, and any preferred spices or mix-ins. If you are using leftover tuna salad, skip ahead. 
  2. Warm the tortillas in the microwave (30 seconds will do) or in a dry skillet (a few seconds per side).
  3. Spread 1 to 1.5 tablespoons of ranch on each tortilla. Spread just down the center for a more concentrated ranch flavor or over the whole tortilla for a more even flavor. 
  4. Scoop half of the tuna mixture down the center of each tortilla, leaving room around the edges for rolling. 
  5. Top with shredded cheese and lettuce to taste. 
  6. Wrap carefully, cut in half and enjoy!
  7. Any leftovers? Wrap the Tuna Roll Up in plastic wrap and store it in the fridge until hungry for up to one day.
