Recipe: grilling with couscous
For 4 portions
Ingredients
300 ml Vegetable broth
150 g Couscous*
1 small cucumber
250 g tomatoes, gladly colorful!
2 spring onions
Herbs (basil, parsley, mint)
Dressing:
3 tablespoons of peanut butter
80 ml olive oil
Juice from a lime or lemon
2 EL AHORT SIRL
50 g peanuts, roasted and salted
Freshly ground pepper
preparation
- Boil vegetable broth. I like to use my homemade vegetable broth paste.
- Pour the couscous with boiling broth over and let it swell for 10 minutes.
- Wash the cucumber and tomatoes and dice both. Clean the spring onions and cut them into rings. Wash the herbs, pat dry and finely chop.
- Mix everything for the dressing, preferably pour into a lockable glass and shake. Season with salt and pepper. Mix the couscous, cucumber, tomatoes, spring onions, herbs and dressing well. Roughly chop the peanuts and sprinkle over it.
