Once the dog days of summer roll around and the novelty of summer cookouts, potlucks, and pool parties have worn off, it can feel tough to figure out what to make for dinner on weeknights. This kebab recipe stands to make mealtime a little easier—and more joyful—to accomplish with the whole family, especially as back-to-school season approaches.
With just five ingredients, including a very simple honey and soy marinade, it’s simple to whip up—and even easier to stretch. The marinade is easily batched, and the recipe is surprisingly adaptable to all sorts of vegetable and protein preferences. Don’t want to futz with the grill? This recipe is easily adapted to a quick sheet-pan roast in the oven, too. Here’s why we’ll be making it all summer—and even into fall!
Why We Love It
This is one of those everything-but-the-kitchen-sink recipes that’s actually quite flexible to ingredient swaps, mix-ins, and additions. Many reviewers who have made this recipe recommend incorporating mushrooms, cherry tomatoes, and other types of sweet peppers. But no matter what you use, the marinade is a flavorful base that ties all the flavors together. “We used onion, cherry tomatoes, and mushrooms, and these were the best skewers we’ve ever made on our grill!” says AMKNIGHT. “We’ll definitely have them again – the marinade just makes the dish!”
Some reviewers even added different types of meat, like steak or even seafood. “My boyfriend of almost 7 years told me that this recipe was one of the best meals I ever cooked him!” says Cooking Karen. “I did add colossal shrimp to the skewers, but I did not even marinate for two hours.”
How to Make Honey Chicken Kebabs
Dotdash Meredith Food Studios
First, you’ll make the marinade—that’s where the “yummy” comes in. Comprised of a simple ratio of honey, soy sauce, and oil, it’s dead simple to make, and surprisingly flavorful for so few ingredients. After letting the meat and veggies marinate for at least a couple of hours, you’ll prepare the kebabs on skewers, then transfer them to a hot grill to cook all the way through.
- Make the marinade. Whisk together honey, soy sauce, oil, and black pepper.
- Add meat and veggies to the marinade. Toss the chicken, onions, bell peppers, and garlic with the marinade until fully coated. Cover and place in the refrigerator at least two hours or overnight.
- Prepare the grill. When you’re ready to cook, preheat a grill and lightly oil the grates to keep the kebabs from sticking.
- Prepare kebabs. Drain the marinade and carefully thread the meat and veggies onto kebab skewers.
- Grill kebabs. Place the kebabs on the grill, turning often, and occasionally brush the reserved marinade overtop for extra flavor and sauciness. Continue until the chicken is registers 165 degrees F.
