Okay, as promised I cooked stuffed zucchini last night along with skinny mashed potatoes and broccoli bake. I thought it was all delicious. However, my husband, Sam wasn’t as keen on the zucchini. He informed me last night that zucchini was his least favorite vegetable, but he did eat the stuffing and said it was really good. Above are photos of the meal with recipes below.

I pretty much made up the broccoli casserole recipe, but below is what I put in it.
BROCCOLI CASSEROLE RECIPE
– Approximatley 30 ozs of frozen broccoli, prepared as directed on package.
– 4 ozs of 2% velvetta cheese
– 1 can of 98% fat free cream of mushroom
– 1 tbsp of light mayo
-garlic powder
-salt
-pepper
-bread crumbs
I steamed the broccoli and then drained. In large bowl I combined the broccoli, cheese, soup, mayo, salt, pepper, and garlic powder. I then topped with bread crumbs and baked until bubbly.
