With so much fresh food available in summer coming straight from the garden, I thought cooking these seven recipes with tomatoes, zucchini, and herbs would be a delicious start. They’re all quick and simple to keep your kitchen cool and your family happy.
Tomatoes, zucchini, and herbs are honestly staples for me year-round, but I love visiting the farmers’ markets to see and buy fresh, locally grown produce. It’s a little exciting to know that you’re feeding your family wholesome food while supporting the farmers who live around you. Plus, food from the farm is so much fresher than even the best produce at your supermarket. So, try to find the market closest to you before you make these recipes.
Tomatoes are the star of the show when you make Cretan Dakos and my Tomato and Red Pepper sauce. They’re both simple, savory-sweet, and flavorful. If you’re having a gathing in the heat or taking something to the beach, you’ll need to make something light, refreshing, and vibrant, like my Roasted Red Pepper Salad or Greek Potato & Green Bean Salad. I know you guys love the marinade for my Easy Greek Sheet Pan Chicken with Halloumi, Veggies & Feta, but remember, it’s not the only dish here that uses zucchini.
